A Weekend with Grammy (and Her Stromboli)

This past weekend my Grammy came to stay with me for a few days. As she’s gotten older, there are certain recipes she doesn’t make as often anymore — one of them being her stromboli.

It’s one of those family recipes that has been around forever. The kind that doesn’t really come from a cookbook, but from years of making it the same way over and over again.

So while she was here, I decided to make her stromboli.

It felt a little full-circle to be the one making it for her.

Instead of spending the weekend running around, we kept things simple. We sat at the table for hours working on two different puzzles and spent some time reading. I realized somewhere in the middle of the afternoon that I must have gotten my love of books from her. She has always been someone who enjoys sitting quietly with a book, and apparently that trait stuck.

It was one of those weekends that felt slow in the best way — puzzles spread across the table, books nearby, and something good baking in the oven.


Grammy’s Stromboli

This is the recipe she shared with me years ago. Like most family recipes, it’s flexible. You add what you like, leave out what you don’t, and make it your own.

Dough

  • 4 cups flour
  • 1 tablespoon yeast
  • 1 tablespoon honey
  • 1½ cups warm water
  • 1 teaspoon salt

Filling

  • Pizza sauce
  • Ham
  • Salami
  • Pepperoni
  • Provolone
  • Mozzarella
  • Parmesan
  • Green peppers
  • Onions
  • Seasonings: Salt, pepper, garlic and oregano

I don’t necessarily measure these ingredients… just layer to your hearts content!! Just be sure not to fill it up too much that you can’t close it!


Instructions

Make the Dough

  1. In a large bowl, combine the warm water, honey, and yeast. Let it sit for about 5–10 minutes until the yeast becomes foamy.
  2. Add the flour and salt to the bowl. Mix until the dough begins to come together.
  3. Turn the dough out onto a lightly floured surface and knead for 8–10 minutes, until it becomes smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it with a towel, and let it rise in a warm spot for about 1 hour, or until it has doubled in size.

Assemble the Stromboli

  1. Preheat your oven to 400°F.
  2. Roll the dough out into a large rectangle on a lightly floured surface.
  3. Spread pizza sauce across the dough, leaving about an inch of space around the edges.
  4. Layer the ham, salami, pepperoni, provolone, mozzarella, and parmesan.
  5. Add the sliced green peppers and onions.
  6. Sprinkle garlic powder, oregano, salt, and pepper over the fillings.
  7. Starting from one long side, carefully roll the dough over the fillings to form a sealed roll. Pinch the seam closed and tuck the ends underneath.
  8. Place the stromboli seam-side down on a baking sheet.

Bake

Bake at 400°F for about 25 minutes, or until the crust is golden brown.

Let it rest for 5–10 minutes before slicing.

Serve warm, with extra pizza sauce on the side if you like.
